What i was really looking for were the foods of the poor, rather than the foods of the wealthy that were recorded and preserved in cookery books. Explore the plant-knowledge that Nabhan evokes in Songbirds, Truffles and Wolves. A reference to moretum is a good start.The recipes are meat-heavy, of course, but there are certainly some that piqued my interest.
I didn't like this one as much as The Medieval Kitchen: Recipes from France and Italy, but it was interesting, and contains some nice or intriguing recipes. I got a good method of baking fish out of this book.
